• 100g unsalted butter (softened)


• 30g brown sugar (or coconut sugar!)


• 1 egg


• 1 tsp vanilla extract


• 120g all-purpose flour


• 30g almond flour (adds a nice nutty taste!)


• 1/2 tsp baking powder


• A pinch of salt


• Optional: sugar-free chocolate chips, chopped nuts, or cinnamon


You can totally swap ingredients to fit your vibe — like using oat flour, adding chia seeds, or tossing in raisins for a natural sweet touch.


Quick & easy steps 👩‍🍳


1. Set your oven to 170°C (340°F) and allow it to preheat.


2. Mix the butter and brown sugar until the mixture is smooth and fluffy.


3. Add the egg and vanilla, then beat until fully combined.


4. Mix in the flours, baking powder, and salt.


5. Fold in your extras like chocolate chips or nuts.


6. Scoop spoonfuls onto a baking tray lined with parchment.


7. Flatten slightly and bake for 10–12 minutes — until lightly golden.


Let them cool on the tray before moving — they'll firm up perfectly. I usually enjoy one warm right away because who can resist? 😍


Tips for success


• Don't overbake! They might look soft in the middle but will continue to set as they cool.


• Almond flour helps with that light crisp — highly recommend!


• If you like a crunchier cookie, bake for an extra minute or two.
